Shortbread with lemon and clementine curd

Looking for a sweet citrus.
A pastry with ricotta flavored with lemon ... be gone, so far away that I was surprised to have found a drawer in the memory, with a name-that-fiadone a check on Google turned out to be just such a cake.
I had eaten in Corsica, during a vacation many years ago, with my "boyfriend of the time" in a beautiful and charming inn in the town of Corte, in the heart of the island.
citrus flavor that I had hit, but I never managed to reproduce the cake exactly as I remembered. So take this latest attempt to be good, 'because the recipes found on the net I did not remember what the Court and then I might as well make something up. Not the fiadone!

I decided to make a curd of mandarin oranges (and given that the preparation Curd is usually delicious) I said to myself might as well use the Thermomix, which needs a certain amount of ingredients.
Here, it happens rarely, but its rarely, a patch with the Thermomix recipe, but the clementine curd is one of them: not just thickened, so that finally we've had to add a teaspoon of cornstarch ...
addition, as preparation for a right of cake it would take at least 500 grams. ricotta, but I was only 200, the idea was to make a layer with the ricotta and one with the Kurds, to close as a glaze. But, alas, this does not thicken your curd and time get on track to go to lunch which was intended for such a sweet, was getting closer ...
... What do I say to myself, vabhé, the sweet "fiadone - style" will be for the next one, today we make a sort of tarte, so subtle that we hardly saw her and the curd (which was not yet ready to fire at the moment ) we'll put it next on your plate.
This is the result, that in spite of all vicissitudes, became really appreciate it!



Lemon Shortbread

a dose of pastry
(your recipe will do)
250 gr. 2 heaping tablespoons of ricotta

sugar 1 / 2 lemon (juice and zest)
a handful of sliced \u200b\u200balmonds

Curd to mandarancio
150 gr.

sugar 3 eggs juice of 4
clementine zest of 2 clementines


The curd is made by melting the butter and sugar with the zest of mandarin oranges insiene fine, having moved with a wooden spoon, low fire. Then add the eggs, juice and continue cooking with a whisk until the sauce thickens.
Preheat oven while hot, in a bowl beat the egg yolks with sugar, add the lemon juice and zest, mix and then incorporate the ricotta cheese, beating well,
Roll out the pastry, cover with cheese and, above , a handful of sliced \u200b\u200balmonds.
Bake at 200 gr. static for 20 minutes. Serve with the cream in spoonfuls on a plate, sprinkle with sugar.
